


Yup, still avoiding my food allergens, one of them being eggs. Though my reactions are now mild, it is great not having rashes on my arms and face. Mug cakes are quick and fun to make. No need to worry much about removing the eggs from a mug cake recipe because if one whole normal sized cake needs one to two eggs, a single mug cake shouldn’t require an egg for such a comparatively small portion.
Some of the original recipes of these mug cakes were already eggless and saved me from allergies. Still, I didn’t have all the ingredients so I went ahead and did some tweaking.

Buttermilk
Again? I wrote about buttermilk in my previous food post but hey, we keep learning. Aside from helping activate baking soda, it is an awesome substitute for eggs as it makes our cakes, cupcakes, and mug cakes soft and tasty.
3 Eggless Mug Cakes | Recipes
Banana Mug Cake
I love banana cake and banana bread so when the opportunity came, it was time to make a banana mug cake. The original recipe by Tornadough Alli looked so tasty and delicious. I need to try making their glaze for this banana mug cake next time. However, to make do with the ingredients I had, this is the recipe I came up with.

DRY INGREDIENTS
- 3 tbsps flour
- 3 tbsps brown sugar
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/2 tsp cinnamon
WET INGREDIENTS
- 1 tbsp melted butter
- 1 tbsp milk
- 1 banana, mashed
INSTRUCTIONS
- MIX all dry ingredients
- MIX all wet ingredients
- COMBINE wet and dry ingredients
- MICROWAVE at 800 watts for 3 minutes
- COOL it down before topping with cream cheese frosting or;
- ENJOY it warm right out of the microwave
- TOP with cream cheese frosting and other desired toppings when cool
Carrot Banana Mug Cake

The original Carrot Cake Mug Cake with Cream cheese frosting by Nancy P. from The Bitter Side of Sweet looked so scrumptious. I even used their cream cheese frosting recipe for all the mug cakes and you can find it below too. Making this mug cake was so fun, I transformed it into a Carrot-Banana Mug cake.
DRY INGREDIENTS
- 1/4 cup (4 tbsps) flour
- 1 tbsp brown sugar
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- salt to taste
WET INGREDIENTS
- 2 tbsps melted butter
- 1 tbsp buttermilk
- 1 tbsp shredded carrots
- 1/2 banana, mashed
INSRUCTIONS
- MIX all dry ingredients
- MIX all wet ingredients
- COMBINE wet and dry ingredients
- MICROWAVE at 800 watts for 3 minutes
- COOL it down before topping with cream cheese frosting or;
- ENJOY it warm right out of the microwave
- TOP with cream cheese frosting and other desired toppings when cool
Cinnamon Mug Cake

The Cinnamon Roll Mug Cake by Gemma’s Bigger Bolder Baking was already eggless so I jumped right in. But knowing me, I didn’t have all the ingredients and just made some minor adjustments. Gemma has a bunch of savory mug meals as well. She makes so many delicious desserts and even gives great cooking and baking tips.
DRY INGREDIENTS
- 5 tbsps flour
- 1 1/2 tbsps brown sugar
- 3/4 tsp cinnamon
- 1/4 tsp baking soda
- 1/8 tsp salt
WET INGREDIENTS
- 1 tbsp melted butter
- 2 tbsps mashed banana
- 2 tbsps buttermilk

Cream Cheese Frosting
This simple cream cheese frosting recipe from The Bitter Side of Sweet’s Carrot Cake Mug Cake is quick and easy. I use it for most, if not all, my mini desserts.

COMBINE
- 1 tbsp of cream cheese
- 1 tsp of milk
- 1 tsp of powdered sugar
